Summer Peach, Corn & Arugula Salad

Fresh, vibrant, and effortlessly elegant—just like summer should be.



Wine Pairing: 2025 Sanctum

This acacia-aged white blend of Sémillon and Sauvignon Blanc offers a layered, elegant profile.

Its citrus and floral notes play beautifully with the peaches and arugula, while the creamy texture complements the mozzarella, making this a perfect pairing for summer evenings.


Ingredients
 (Serves 4):
  • 4 cups fresh arugula

  • 2-4 ripe peaches, thinly sliced

  • 2 ears fresh corn, grilled or boiled, kernels removed

  • 1/4 small red onion, thinly sliced (optional)

  • 1/3 cup fresh mozzarella cubed

  • Handful of fresh basil leaves, torn


Dressing:
  • 3 tbsp extra virgin olive oil

  • 1 tbsp Pacific Peach vinegar (Pasolivo has the best!)

  • Salt & freshly cracked black pepper to taste



Instructions:
  1. Cook the corn: Grill or boil until just tender (5–7 minutes). Cool and slice kernels from the cob.

  2. Make the dressing: Whisk together olive oil, vinegar, salt, and pepper.

  3. Assemble: In a large bowl, combine arugula, peaches, corn, red onion, and basil.

  4. Finish: Drizzle with dressing and toss gently. Top with cheese and nuts.

  5. Serve immediately, preferably with a chilled glass of Sanctum.
