Summer Peach, Corn & Arugula Salad

Wine Pairing: 2023 Sanctum
This acacia-aged white blend of Sémillon and Sauvignon Blanc offers a layered, elegant profile.
Its citrus and floral notes play beautifully with the peaches and arugula, while the creamy texture complements the feta, making this a perfect pairing for summer evenings.
Ingredients
(Serves 4):
4 cups fresh arugula
2 ripe peaches, thinly sliced
2 ears fresh corn, grilled or boiled, kernels removed
1/4 small red onion, thinly sliced (optional)
1/3 cup fresh mozzarella cubed
1/4 cup toasted pecans or almonds (optional)
Handful of fresh basil leaves, torn
Dressing:
3 tbsp extra virgin olive oil
1 tbsp Raspberry-Basil vinegar (Pasolivo has the best!)
Salt & freshly cracked black pepper to taste
Instructions:
Cook the corn: Grill or boil until just tender (5–7 minutes). Cool and slice kernels from the cob.
Make the dressing: Whisk together olive oil, vinegar, salt, and pepper.
Assemble: In a large bowl, combine arugula, peaches, corn, red onion, and basil.
Finish: Drizzle with dressing and toss gently. Top with cheese and nuts.
Serve immediately, preferably with a chilled glass of Sanctum.
